Brut Suprême in magnum: Bonvalet's signature cuvée, for large gatherings.

Brut Suprême is the first cuvée of Pauline and Guillaume Bonvalet, the one that launched their house. A blend led by pinot noir, which gives it structure, completed by chardonnay, which brings freshness.
Why a magnum: the wine evolves more slowly, keeps its freshness and gains finer bubbles. It is also the format for receptions and celebrations.
Appearance: light gold, with a long stream of fine bubbles.
Nose: floral, with blackberry, green apple and fresh apple, citrus (lemon zest, mandarin peel) and an iodine hint of sea spray.
The fruit: blackberry, green apple, fresh apple, lemon zest and mandarin peel.
Palate: light attack, fine texture, marked salinity; fresh and tangy, with fine yet lively bubbles and a slight roundness on the finish.
Pairings: above all the aperitif, with oysters, sushi or thinly sliced Iberico ham; also seafood, fish and roast poultry.
Serving: at 8 to 10 °C.
Total price: $147 per bottle, i.e. $441 per case of 3.

Based in Pierry, on the slopes of Épernay, the Bonvalet house is the story of a couple, Pauline and Guillaume Bonvalet, who founded their own champagne house in 2012, with no inherited vines. The first bottles left the cellars in 2014, after two years of ageing.
Their motto, « À cœur vaillant rien d'impossible » (to a valiant heart, nothing is impossible), sums up the house's spirit: a demanding yet approachable champagne that expresses its terroir. The grapes come from vines certified High Environmental Value (HVE) and Sustainable Viticulture in Champagne (VDC). The Gault&Millau guide follows and rates their cuvées.
